This time of year is a little hectic. That’s a nice way of saying, “I am so stressed out, I can barely see straight!”. One of the first things that goes out the window is the healthy diet I usually try to stick to. It’s so much easier to go pick up some fast food or order some pizza, instead of making a meal at home. My wife and daughter love it when I cook and have requested some sensible, tasty meals during the holiday season.
I recently went to my local BJ’s Wholesale Club and picked up some new pasta for us to try.
I know what you’re thinking… Gluten-Free means taste free. But, not with Barilla Gluten-Free Pasta. It has delicious flavor and texture. It tastes just like regular pasta!

We love anything with alfredo, so I decided to make one of our favorite recipes completely Gluten-Free. It’s really easy and totally delicious. Enjoy!
One Pot Gluten-Free Blackened Chicken Alfredo
Ingredients:
- 2 tbsp. olive oil
- 1 lb. boneless skinless chicken breast. Cut into chunks.
- 2 tsp. Blackened seasoning, divided
- 3 garlic cloves, minced
- 2 cups chicken broth
- 1 cup half and half
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 12oz box Barilla Gluten-Free Penne
- ½ cup grated parmesan cheese
- 2 oz goat cheese
Instructions:
- Heat the oil in a large pot over medium high heat. Add the chicken and season with 1 teaspoon blackened seasoning. Cook until chicken is cooked all the way through. Add the garlic and continue cooking for about 1 minute.
- Add the broth, half and half, 1 teaspoon cajun seasoning, salt and pepper to the pot. Add the entire box of Barilla Gluten-Free Penne to the pot.
- Cover and bring to a rapid boil. Reduce heat to medium low and continue to cook for 10-12 minutes or until the penne is al dente and there is only about 1/3 inch of liquid in the bottom of the pot.
- Remove from heat and stir in the parmesan and goat cheese. Serve immediately.
We like to add a little broccoli!
