Summer is here and I am ready to break out all of my favorite light and tasty recipes. I’m all about cooking for friends and family. Whether it is summer barbecues or simply just enjoying the sunshine, living in Florida will get you into a cooking state of mind. I love the amazing local seafood, fruits and vegetables. A plate full of colorful, locally grown food always hits the spot. One of my favorite dishes is Garlic Parmesan Shrimp Pasta.
Living in Florida, my family and I get really spoiled. We don’t have to go far to find some the best and tastiest local fruits, veggies and every type of sea creature that you could imagine. It definitely influences how and what we cook. The bounties of summer are in particular some of the best ingredients that my beautiful State has to offer. The tastes and colors are almost overwhelming!

Garlic Parmesan Shrimp Pasta
Instructions:
- Sauté the shrimp until cooked and set aside.
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
- In a medium saucepan, combine butter, garlic and Fresh From Florida shrimp over medium heat until the butter has melted. Cook, whisking constantly, until the butter has a light brown color.
- Remove from heat. Stir in pasta and Parmesan until well combined. It will take 2-3 minutes. Add salt and pepper, to taste.
- Garnish with parsley and then serve immediately.
