I know you have heard the phrase, “The apple doesn’t fall far from the tree”. When it comes to my 11-year-old daughter, that is absolutely the truth! The kid is a lot like her dear old dad. We’re both artistic, we both have a great sense of humor, we are both into movies and we both LOVE comic books. That last one took some time. I would never push her into liking something just because I do, but I was secretly hoping for her to eventually get into comics. I won’t lie, I teared up the first time she asked me to take her to her first Comic-Con.
We’ve been waiting to see Fantastic Four (Now In Theaters), all summer. If you’re anything like us, when we think of movies, the next thing we think of is… popcorn! So, I thought it would be cool to make a fun popcorn recipe to celebrate the opening of Fantastic Four.
We went to our local Walmart and picked up some of our favorite microwave popcorn, Pop-Secret.
We’ve been eating it since my daughter was little and she refuses to eat any other brand. We usually go with the Homestyle. This recipe is perfect for family night or sharing with friends at a party.
Fantastic Cupcake Batter Popcorn:
Ingredients:
- 1 bag microwavable Pop-Secret popcorn
- 3/4 cups white chocolate chips or vanilla candy melts
- 1/4 cup vegetable oil or coconut oil
- 3/4 cups white or yellow cake mix
- 1/3 cup blue sprinkles (The Fantastic Four’s original uniforms were blue and white)
Directions:
- Put the Pop-Secret in the microwave. Follow packaging instructions. Transfer popcorn to a large bowl, make sure you pick out all of the unpopped kernels.
- Melt the white chocolate chips or candy melts in the microwave in 30 second intervals, stirring between each 30 seconds until it is smooth and melted.
- Stir in the vegetable/coconut oil to the melted chocolate until smooth. Then add the cake mix to the chocolate. The mixture will be thick, so mix until well-incorporated.
- Drizzle the chocolate/cake batter mixture over the popcorn and add some of the sprinkles. Use your rubber spatula to toss everything together until coated evenly.
- Spoon into baking cups to allow the chocolate to harden and sprinkle the remaining sprinkles on top.
- Let cool for 20-30 minutes.
